Thoughtful Bread Company Opens Cookery School

The award-winning Bath artisan bakery The Thoughtful Bread Company has launched a bakery school to coincide with its relocation following a crowdfunding call out to investors.

Established in 2009 by Duncan Glendinning, the business started off as a predominantly wholesale-led business, selling to some of the very best restaurants, cafes, farm shops and delis in Bath and the surrounding area.

“The intention was to run a local bakery but the rental and planning restrictions prohibited us from doing so from the outset, which is why we were landed in an out-of-town production unit,” explains Duncan.

A crowdfunding invitation however was set to turn the fortunes of the business in late 2012. “We decided to offer up equity in our business in return for investment from individuals to help fund our move to city centre premises.” In just nine days the company raised £55,000 and was able to start the search for suitable premises.

Whilst 2013 didn’t deliver on premises, the company was leapfrogged into the limelight through publishing its first book, “Bread Revolution” as well as regular TV appearances including ITV’s Britain’s Best Bakery and BBC’s Nigel Slater.

Late 2013 saw the business finally secure its premises right in the heart of Bath and from early 2014 the first flagship bakery shop and school was opened.

“I am delighted to finally have my whole team reunited under one roof. The future of Real Bread bakeries are those that can bake and retail in one place. We are able share our passion and run bakery and patisserie courses in our own dedicated space,” Duncan commented.

Due to the business’ notoriety and Duncan’s relentless drive, they were able to secure sponsorship from a few selected brands.

“The idea was to simply approach those I believe to be at the top of their game and ask them whether they would like to join us for the journey. I was delighted to hear they all were keen.”

Delegates who attend a bread-making or patisserie course at Thoughtful Bread will have a stunning facility at their disposal. The space is kitted out with the very latest kitchen gadgetry from Kenwood, Servis and Robert Welch, as well as fantastic ingredients including Bart Ingredients.

What delegates leave with however, is a renewed understanding of the hard work and dedication behind the Real Bread baking industry.

“We don’t just bake. Too many do just this. Instead we aim to inspire, engage and entice through our range of breads and patisseries. When you join us on a bread making course you leave with a passion for our craft and tips and tricks no book will ever teach you,” Duncan continued.

In an industry capitalising on the renewed interest in baking, The Thoughtful Bread Company is also bucking the trend by offering real value for money. Priced from £160, courses include membership to the Real Bread Campaign (at a value of £35) and a goodie bag.

A patisserie with a tea or coffee is offered on arrival, a canape? selection for lunch and a plethora of cake and tea in the afternoon, delegates will be fuelled throughout the day for a valuable and memorable time with Thoughtful Bread Co. at their Bakery School.
